Healthy Christmas Bites

Are you looking for a tasty and nutritious snack to fuel your day? Look no further! This Healthy Christmas Bites recipe is the perfect solution. Packed with wholesome ingredients, this snack is easy to make and even easier to enjoy.

Dry ingredients:

 

Wet ingredients:

  • 1/4 c. butter (1/2 a stick)
  • 1/4 c. brown sugar (dark or light works)
  • 1/4 c. honey
  • 1/4 c. peanut butter (smooth)
  • 1 tsp. pure vanilla extract

 

Directions

  1. Line a 9x9 baking dish with wax paper and spray with non-stick cooking spray, then set aside. (lightly buttered works as well)
  2. In a large mixing bowl, mix together all of the dry ingredients.
  3. In a saucepan, add all of the wet ingredients EXCEPT for the vanilla. Over medium-low heat, mix together the mixture until it melts and comes to a low boil. When the mixture comes to a low boil, stir constantly for two minutes. Remove from heat, then add the vanilla. The vanilla will bubble up, but continue to stir until combined.
  4. Add the syrup mixture to the dry ingredient mixture and stir well until all of the ingredients are well combined. Add the mixture to the prepared baking pan and press down firmly using your hands. (You can layer a small sheet of wax paper over the top then press down. To avoid sticking, spray/lightly butter this sheet.)
  5. Set the baking pan in the fridge to cool and to set for about an hour. Cut into equal-sized squares and store in the fridge. These are better the next day!

*Do not fret if the recipe falls apart! It works great as a crumble mixture as well. Just serve in a bowl!
