Ingredients
- 2 cups Honey Oat Granola
- 1/2 cup peanut butter
- 1 cup mashed banana (about 2 large bananas)
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup Dried Banana Chips
Instructions
*Depending on your desired thickness, a round 8 inch baking pan works for approximately 24 pieces 1/2 inch thick
- Line a 9 x 13-inch baking dish with parchment paper and spray with non-stick cooking spray. Set aside. (This makes for super easy removal and clean up later!)
- Add all ingredients to the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until well combined. (If you do not have an electric mixer, mixing by hand works as well. Use a large mixing bowl and a large rubber spatula to mix.)
- Press mixture evenly into prepared dish. Press additional chocolate chunks and banana chips into the top of the granola bars, if desired.
- Cover with plastic wrap and place bars in the refrigerator for at least an hour before lifting from the baking dish (with the sides of the parchment paper) and cutting into bars.
*Bars will be be gooey and slightly sticky due to the mashed banana
